The latest from #gourmetised test kitchen!! Today we are cooking Quinoa Stuffed Bell Peppers.
A wholesome snacking option that fills you up and adds to your health. This is the best dish to dig into while you are losing weight but don't want to compromise on the taste.

This quantity serves 4.
Let's start cooking.
INGREDIENTS
• Bell Peppers- halved & deseeded 2
• Cooked Quinoa- 1 cup
• Cloves of Garlic- minced, 6 to 7
• Onion- finely chopped, 1
• Tomato- finely chopped, 1
• Mixed Veggies like Carrots, Corn & Broccoli- steamed & finely chopped, 1 cup
• Mixed Herb Seasoning- 1 tsp
• Oregano- ½ tsp
• Chilli Flakes- 1 tsp
• Salt & Pepper- as per taste
• Vinegar- a dash
• Olive Oil- 3 tbsp
• Grated Cheese (optional)
METHOD
1. Heat 1 tbsp olive oil in a pan.
2. Cook the onions until translucent, then add garlic.
3. Cook for a min, then add the tomatoes and cook till mushy.
4. Add all the other ingredients, and cook for 5 min.
5. Coat the bell peppers with the remaining oil.
6. Now stuff the bell pepper halves with this mixture and top with cheese if using.
7. Bake in a preheated oven at 180°C for 20-25 min or until brown spots appear in the pepper.
8. Serve hot.
