Donna Pastaia came up with these beautiful handmade Corzetti Pasta, especially for Raksha Bandhan. Corzetti pasta is traditionally flat round pasta that is stamped with images. These were stamped with the words '#1 BRO' and '#1 SIS' and were the perfect addition to the festivities.
I paired it with a healthy bechamel sauce that was refined flour-free and without cheese but was extremely flavorful. Do try it out and let me know how u liked my interpretation of white sauce!

Recipe for White Sauce
INGREDIENTS
• 4 Cups Milk (you can use Soy Milk if vegan)
• 1 Cinnamon Stick
• 3-4 Cloves
• 1-Star Anise
• 6-7 Black Peppercorns
• Few Sprigs of Thyme
• Few Sprigs of Rosemary
• 4-5 Cloves of Garlic
Boil the milk with all the other ingredients. Once it comes to a rolling boil, take off from heat and strain.
This flavored milk will be used to make the sauce.
• 1/2 Cup Whole Wheat Flour or Oats Flour
• Salt to taste
• 1/2 tsp Garlic Powder
• 1 tsp Chilli Flakes
• 2 tsp Mixed Herbs Seasoning
METHOD
• Put the milk back on the heat to boil.
• Take out 1 cup of it and add the flour to it and whisk well to remove all lumps.
• Add this back to the milk and keep stirring.
• Mix in all the seasonings and adjust flavors as per taste.
• Keep stirring until the sauce thickens and it's completely without lumps.
You can use this sauce on a variety of dishes. I used it to make 'mac and cheese' for my kids, but with my own gourmet twist - by using the Corzetti pasta and then topping with fresh basil leaves.
