WATERMELON & FETA SALAD

Once summer hits, we yearn for this classic staple. Fresh and chilled, it's an explosion of flavours in the mouth. You can make many variations with it, here's the one I made today with available ingredients.

SERVES 4


INGREDIENTS

2 cups watermelon scooped balls

½ onion, sliced thin

¼ cup mint leaves

¼ cup spinach leaves

handful of lettuce

¼ cup feta cheese

Dressing:

3 tbsp olive oil

1 tbsp lemon

1 tbsp honey

¼ tsp mustard powder

Black pepper to taste

Salt to taste


METHOD

  1. Scoop out the watermelon into small roundels.

  2. Slice onions thin and put them in ice cold water to remove the tartness.

  3. Chop mint and spinach and tear lettuce in shreds.

  4. Crumble the feta.

  5. For the dressing, in olive oil squeeze lemon, add the honey, mustard powder and cracked black pepper and very little salt. Feta contains salt, so be mindful of that.

  6. Toss the dressing with salad ingredients and serve chilled.

This salad tastes amazing with balsamic vinegar as well, you can substitute it with lemon juice.
